Greek inspired smash tacos !! 🍅🥒 recipe below!  INGREDIENTS:  *recipe yields 4 smash tacos  - 1 pound of ground beef  - 4 tortillas (I’m using @Siete Foods)  - 1 tsp ground cumin  - 1 tsp oregano  - 1/2 tsp sea salt  - 1/2 tsp black pepper  - High smoke point oil for the pan (I prefer avocado oil)  TOPPINGS:  *feel free to substitute with your own!  - 1/4 cucumber peeled and chopped  - Cherry tomatoes (halved) - Homemade dairy free tzatziki (full recipe posted on my page)  - Roughly chopped red onion  - Fresh dill  - Lemon wedges  INSTRUCTIONS:  - start by prepping your toppings. I halved my  cherry tomatoes, peeled and chopped my cucumber, roughly chopped some red onion and made my dairy free tzatziki (full recipe posted).  - Then in a large bowl, add your ground beef, cumin, oregano, salt and pepper. Mix until just combined.  - Break your meat into 4 sections.  - I prefer using frozen tortillas for this but do what your heart desires! Add your tortilla to a plate, press your ball of meat into the tortilla and get it as thin as you can. Spread evenly to the shape of the tortilla. Repeat this step for the rest !  - Then heat up a cast iron skillet over medium heat, add a drizzle of high smoke point oil. Once the pan is hot, add your smash taco meat side down. Cook about 1-2 minutes. Then flip and cook on the tortilla side for about 30 seconds. Then remove from heat and set aside on a plate.  - Repeat this for the rest of the smash tacos. Add your toppings and serve !!!!! Chicken salad has been one of my favorite meals since college. It’s which, easy, and high in protein.  You can used canned chicken for this - but I opt to pressure cook chicken breast in bone broth in my instant pot. This increases protein more, has only two ingredients and contains no added fillers. The world is your oyster with chicken salad. Don’t like grapes? Allergic to nuts? No worries. Just remove those and replace with cranberries, seeds, etc. You can make this to your liking.
