@pockettoplate Something a little different ๐ nice to have use of both of my hands during a cooking video for a change ๐ช Super simple chicken curry recipe for you to have a crack at this weekend ๐ Proper simple to do and will rival any takeaways out there I can promise ya that! ๐ฅ INGREDIENTS - 600g boneless & skinless chicken thighs - 2 onions - 1 red chilli - Bunch of coriander - 1 lemon - 6 tbsp natural yoghurt - 2 bulbs of garlic - 2 thumbs of ginger - 1 tsp mustard seed - 1 tsp cumin seeds - 4 tbsp curry powder - Tin of chopped tomatoes METHOD 1. Cut chicken thighs into chunks and put into a bowl ready to marinate. 2. Finely chop one bulb of garlic and 1 thumb of ginger. Add into the chicken. Add the natural yoghurt, 2 tbsp curry powder, juice of a lemon, salt and paper. Mix to coat, cover the bowl and put in the fridge overnight or for at least 2 hours. 3. Chop onions, chilli (de-seed), bulb of garlic and coriander. 4. Add vegetable oil to a pan and heat before putting marinated chicken in. 5. Cook the chicken until nicely coloured and cooked through. Set the chicken aside. 6. Use the same pan to cook the onions. After a few mins, add cumin and mustard seeds. When browned and softened, add the ginger, garlic, and chilli and cook for further 2 mins. Cook until caramelised (10 mins). 7. Add the curry powder, tin of chopped tomatoes and coriander. Fill the tin with water and add to the pan. Simmer for 45 mins and blend if desired. 8. Add the cooked chicken and cook until fully reheated. 9. Garnish with chopped chilli, coriander and a little natural yogurt
