Ovenroasted Eggplant with squashed habanero tamarind sauce /  Terung bakar dalam oven dengan air asam habanero picit 🍆 I prefer roasting eggplants in the oven over grilling them on my induction stove. To be honest, I'm not a huge fan of induction stoves.  🍆 I used tilapia fillets because they were the most accessible option. A scene shot in Las Vegas. 🤍But life had other plans—my hubby fell sick, got caught up with meetings, and couldn’t make it happen over there. 🤍This was supposed to be a CNY special, but by the time he got back, he was still unwell and could barely taste anything… except the asam pedas & cencaluk that he was craving for.  🤍I had to change one dish ( prawn dumplings to daging goreng kunyit) so that my husband doesn't have to wait longer. 🤍That night, I joined the bandwagon. Then, our son. 🤍Hence, the silence these past few days. 🤍We’re all okay now—slowly recovering and getting back on track! 🤍P.S. I couldn’t do a voice-over because my voice is still too rough. 🍲Cod Masak Asam Pedas  🛒Ingredients Blended items: • 1 Big Red Onions • 2 Shallots • 3 pcs Garlic • 4 slices Galangal • 1.5cm Ginger • 1.5cm Fresh Tumeric ( I pounded separately )  Other ingredients • Cod Fillets × 2 • 2 stalks Lemon Grass, bruised • 1 Tbsp Tamarind paste mix with 1 cup of water • 1 Torch Ginger, cut into half • 7-8 Tbsp Blended Chilli Paste • 2 Habanero • 1 Anchovy Stock • Salt, sugar & seasoning • Cooking Oil •  5 Ladies Fingers ( optional ) • 1 Tomato, cut into 6 sections Method: °Heat up oil  °Make sure not too much oil, pour just nice for of the blended ingrediens °Add blended items, cook until fragrant and oil separates. °Add blended dry chillies, torch ginger , lemingrass and cook until oil separates. °Add mixture of water and tamarind paste. °Add water if need to. Adjust the thickness to your liking. The first thing that came to mind to use them up was Masak Kicap.  🤍 I was also in a rush since I had my first physio appointment at 12 noon ( Thursday Jan 23). To save time, I decided to roast the chicken instead of frying it. I had to improvise, and after that first bite—wow. Even though it was just inspired, I honestly have no words to describe it. So good, so comforting. I even used arugula as my ulam! Fast forward, now I know exactly where to go and which Asian store has what I need... haha! 😉😜  Masak Asam Pedas-Inspired "Beef Stew"  🍛 This dish is my take on Masak Asam Pedas, a Malay spicy tamarind gravy traditionally made with fish, beef, or chicken. 🍛 Some key ingredients were hard to find when we first moved here, so I had to get creative with substitutions—doing my best to stay true to the flavors I love. 🍛 Over time, I’ve learned to go with the flow. Even Asian markets don’t always have what I need, and that’s okay. ❤️ I make the best of what I have, enjoy the process, and keep cooking! 🤩  🛒Ingredients •500g Beef ( or chicken )  •2Tbs Cooking Oil •6 cloves garlic, slice •1 thumbsize ginger, julienne •1 habanero, slice •10 sprigs Fresh Thyme •1-2Tbsp Chilli Oil  •1 cup Liquid Beef Stock ( or Liquid chicken stock) •2Tbsp Soya Sauce •1 cube beef stock •1-2 stalk Lemongrass ( fresh is always better unless if you dont have then opt to Lemongrass paste •1 whole lemon, squeeze the juices •Salt and sugar to taste •1 Whole or half Large Red Onions, cut into wedges •Garnish with coriander leaves  👩‍🍳 Method as shown in the video  🍽Serves with piping hot rice, omelette and Arugula ( Ruccola / Rocket ). Sambal Ketuk Habanero & Ikan Bilis /  Crushed Habanero Sambal & Anchovies  🤍I made this for Ramadhan stock. But do you think it will last😅?  🛒Ingredients • 1 handful raw peeled anchovies • 1 handful green habanero • 5 shallots • 3 garlic • Cooking Oil • 1 tsp toasted belacan • Salt, Sugar & Food Seasoning to taste  • Kalamansi 👩‍🍳 Method 1. Wash / Rinse / Dry the anchovies. 2. In a pan, Heat up oil 3. Once oil is really hot, add anchovies  4. Fry by batches, and set aside 5. In the same pan, add shallots, garlic and habanero 6. Fry until the turn soft 7. Scoop out , set aside 8. In the meantime, toast belacan 9. In a pestle & mortar start crushing fried shallots, garlic, habanero, toasted belacan, salt, sugar & food seasoning 10.
