I made mine with the crusts from homemade Uncrustables, but any dried bread will work. Ingredients: Custard Base: 8 eggs 2 cups milk ¾ cup brown sugar 1 tbsp cinnamon Splash of vanilla Dried bread cubes (enough to soak up the custard) 2 cups peeled and finely chopped apples Crumb Topping: ¾ cup brown sugar ¾ cup flour 1 tsp cinnamon 2–3 tbsp melted butter or margarine (enough to create a wet sand texture) Instructions: Cut leftover bread or crusts into cubes and let them dry out overnight. In a large bowl, whisk together eggs, milk, brown sugar, cinnamon, and vanilla. Fold in the bread cubes and chopped apples. Add just enough bread to soak up the liquid. Divide into 24 greased muffin tins (or use silicone pans). Mix together the crumb topping ingredients and sprinkle on top. Bake at 350°F for 25 minutes. Cool completely before freezing. Today I used three Michelina’s Salisbury steak dinners to make a hearty one-pot pasta dish that fed four—and came in right at $10. Ingredients (All $1.25 each): • 3 frozen Salisbury steak dinners – $3.75 • 2 boxes beef pasta dinner kits – $2.50 • 1 jar mushrooms – $1.25 • 1 bag frozen seasoning blend – $1.25 • 1 small container of milk – $1.25 Total: $10.00 exactly How I made it: Microwaved the frozen dinners just enough to thaw, then sautéed half the frozen seasoning blend with a drained jar of mushrooms in a little oil. Added the Salisbury steaks (with gravy) and broke them up into chunks like ground beef. Stirred in the pasta kits, seasoning packets, water, and milk as instructed.
