Lemon poppyseed cake: Ingredients: - 3/4 cups all purpose flour - 1/2 cup cake flour - 1/2 teaspoon baking soda - 1/2 teaspoon baking powder - 1/2 teaspoon salt - 1 1/2 tsp poppy seeds - 3/4 cup + 2 tbsp granulated sugar - 1/2 cup + 2 tbsp vegetable oil - 2 tbsp butter-flavored shortening or vegetable flavor - 1 egg - 1/2 teaspoon pure vanilla extract - 1 heaping teaspoon lemon zest (from 1-2 lemons) - 1/2 cup buttermilk - 1/2 teaspoon white distilled vinegar - 3 tbsp hot lemon water (hot water mixed with 1 tablespoon fresh lemon juice) - 1-2 drops yellow food coloring Cream Cheese Frosting - 4 tbsp butter softened - 8 oz cream cheese softened - 1/2 cup to 1 cup powdered sugar sifted (add depending on your sweetness preference) Method: 1. Preheat oven to 325 F. Thoroughly grease and flour a (9-inch) dark cake pan. Set aside. 2. In a large bowl sift together flour, baking soda, baking powder, poppy seeds, and salt. Set aside. 3. In a large bowl mix together sugar ,oil and shortening. 4. Mix in eggs one at a time. 5. Mix in vanilla extract, lemon extract and lemon zest. 6. Combine dry ingredients into wet ingredients, alternating with the buttermilk. 7. Mix together the distilled vinegar and lemon water and mix into the batter. 8. Mix in the food coloring until your desired shade of yellow is reached. 9. Pour batter evenly into prepared pan and shake pan to release any trapped air bubbles. 10. Bake for 18-20 minutes, checking it by using a toothpick to check the center. 11. When moist crumbs cling to a toothpick inserted into the center of the cake, remove cake from oven. Let cake rest in the pan until pan is cool enough to touch. The cake will continue to cook as it cools. 12. Once cooled, carefully remove cake from pan and place on a cooling rack to cool completely. Cream Cheese Frosting: 1. In a large bowl, mix together cream cheese and butter. 2. Mix in powder sugar until creamy. 3. Place frosting in the fridge to allow it to firm up a bit before frosting. 4. Stir the frosting until it’s creamy and spreadable and frost the cakes.
