🍲 This hearty split-pea soup isn’t just high in protein, it’s the ultimate comfort food too. (without having to resort in slider foods which are way to easy to overeat on!). Here’s the full recipe for 4 servings (serving size is about 1 cup) Ingredients: * 1 cup dried green split peas * 4 cups low-sodium vegetable or chicken broth * 1 medium carrot, diced * 1 medium leek, cleaned and sliced (white and light green parts) * 1 celery stalk, diced * 1 smoked sausage (about 6-8 oz), sliced * 1 bay leaf * Salt and pepper to taste * Fresh parsley (optional, for garnish) Instructions: 1. Rinse the split peas thoroughly under cold water. 2. In a large pot, add the broth, split peas, carrot, leek, celery, and bay leaf. Bring to a boil, then reduce to a simmer and cook for 45 minutes or until the peas and vegetables are tender. 3. Stir in the sliced smoked sausage, and simmer for another 10-15 minutes until the sausage is heated through. 4. Season with salt and pepper to taste. Remove the bay leaf before serving and garnish with fresh parsley if desired.
